Served up with refreshing mango salsa, crisp lettuce and a squeeze of lime, these crispy Asian-spiced prawns are guaranteed to be a hit.

Ingredients

Cornflour

1 tbs

Dried chilli flakes

1 tsp

Chinese five spice

1 tsp

Raw peeled prawns

400 g, King variety

Cos lettuce

1 baby, leaves separated

Lime(s)

1 medium, wedges to serve

Oil spray

1 x 3 second spray(s)

Mango

1 medium, finely diced

Tomato(es)

2 medium, finely diced

Lebanese cucumber

½ medium, finely diced

Garlic

1 clove(s), crushed

Lime rind

1 tsp, finely grated

Lime juice

1 tbs

Fresh coriander

¼ cup(s), coarsely chopped

Instructions

  1. Combine cornflour, chilli flakes, Chinese five spice, 1 teaspoon coarsely ground black pepper and a large pinch of salt in large bowl. Add prawns and toss to coat.
  2. Lightly spray a large non-stick frying pan, barbecue or grill pan with oil and heat over medium-high heat. Cook prawns, in 2 batches, for about 1-2 minutes on each side, until browned and cooked through.
  3. To make the salsa, combine all other ingredients in a bowl. Season with salt to taste and set aside.
  4. Spoon mango salsa over lettuce leaves and top with prawns. Serve with the lime wedges on the side.

Notes

For an equally delicious vibrant flavour, swap in 1 cup finely diced fresh pineapple to replace mango.
