Ingredients

Garlic

1 clove(s)

Capers, rinsed, drained

1 tsp

Pickled gherkin, drained

4 individual, (4 x 25g baby gherkins)

Fresh mint

¼ cup(s), leaves

Fresh flat-leaf parsley

¼ cup(s)

Dijon mustard

1 tsp

Olive oil

2 tsp

Red wine vinegar

3 tsp

Lemon juice

1½ tbs

Baby potatoes

400 g, chat variety

Broccolini

300 g, halved

Skinless salmon

4 medium, (4 x 160g) cooked

Instructions

  1. Process garlic, capers, gherkins, mint, parsley, Dijon mustard, oil, red wine vinegar, lemon juice and 1 tablespoon water in a food processor until smooth. Season salsa verde with salt and pepper.
  2. Cook potatoes in a large saucepan of boiling water for 10 minutes. Add broccolini for last 5 minutes of cooking. Drain.
  3. Top salmon with salsa verde. Serve with steamed potatoes and broccolini.
