Ingredients

Orange rind

1 tsp, finely grated

Vermouth

2 tsp

Whole grain mustard

1 tsp

Skinless salmon

140 g, (1 x 140g fillet)

Fennel

1 baby, cut into 1cm pieces

No added sugar orange juice

¼ cup(s), (60ml)

Garlic

1 clove(s), crushed

Fresh thyme

1 tsp, leaves

Lentils, canned, rinsed, drained

Instructions

  1. Combine rind, vermouth and mustard in a small shallow dish. Season with salt and pepper. Add salmon and turn to coat.
  2. Place fennel in a microwave steamer with juice, garlic and thyme. Season with salt and pepper. Toss to combine. Close steamer and microwave on High (100%) for 5 minutes.
  3. Stir lentils into fennel mixture. Place salmon on top of fennel mixture and drizzle over any remaining marinade. Close steamer and microwave on High (100%) for 3½ minutes or until cooked to your liking (a thin fillet may take less time). Serve fennel mixture topped with salmon.

Notes

TIP: If using the oven instead of the microwave. Preheat oven to 180˚C and bake for 15 minutes in step 2 and for 10 minutes in step 3.
