Using ready to microwave brown rice cuts down the prep time of this super quick meal dramatically. It can be ready on your table in 10 minutes.

Ingredients

brown rice microwave packet

450 g

seasoning

1½ tbs, sushi seasoning

lebanese cucumber

2 medium, cut into ribbons

carrot(s)

2 large, grated

baby spinach leaves

150 g

skinless salmon fillet(s)

250 g, sashimi grade, thinly sliced

reduced salt soy sauce

2 tsp

sesame seeds

1 tsp, toasted

Instructions

  1. Microwave brown rice following packet instructions. Combine rice and sushi seasoning in a large bowl. Divide rice among serving bowls.
  2. Top with cucumbers, carrot, baby spinach and salmon. Drizzle with soy sauce and toasted sesame seeds to serve.
