Salmon, brown rice and greens bowl
Brown rice microwave packet
Frozen green peas
½ cup(s), (60g)
99% fat-free, plain or natural yoghurt, unsweetened
¼ cup(s), (60g)
Fresh lemon rind
1 tsp, finely grated
Mixed salad leaves
Hot smoked salmon
150 g, skin removed, flaked
2 medium, soft-boiled, halved
1 bunch(es), sprigs, to serve
- Heat rice following packet instructions.
- Meanwhile, boil, steam or microwave asparagus and peas until just tender. Drain.
- Whisk yoghurt, lemon rind and lemon juice in a small bowl. Season with salt and pepper.
- Arrange rice, asparagus, peas, salad leaves, salmon, egg and dill in serving bowls. Serve drizzled with yoghurt dressing.
