Brown rice microwave packet
200 g
Asparagus
2 bunch(es)
Frozen green peas
½ cup(s), (60g)
99% fat-free, plain or natural yoghurt, unsweetened
¼ cup(s), (60g)
Fresh lemon rind
1 tsp, finely grated
Lemon juice
1 tbs
Mixed salad leaves
60 g
Hot smoked salmon
150 g, skin removed, flaked
Boiled egg(s)
2 medium, soft-boiled, halved
Fresh dill
1 bunch(es), sprigs, to serve
Instructions

Heat rice following packet instructions.

Meanwhile, boil, steam or microwave asparagus and peas until just tender. Drain.

Whisk yoghurt, lemon rind and lemon juice in a small bowl. Season with salt and pepper.

Arrange rice, asparagus, peas, salad leaves, salmon, egg and dill in serving bowls. Serve drizzled with yoghurt dressing.
