These tasty sage and apricot stuffing balls keep well in the fridge and make perfect left over picnic fare.

Ingredients

Olive oil

1 tbs

Red onion

1 small, finely chopped

Garlic

2 clove(s), crushed

Celery

1 stick(s), trimmed, finely chopped

White sourdough bread

150 g, or rustic white bread, chopped

Dried apricots

½ cup(s), diced

Fresh flat-leaf parsley

2 tbs, finely chopped

Fresh sage

2 tbs, finely chopped

Egg(s)

2 medium, lightly beaten

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced and line a baking tray with baking paper.
  2. Heat oil in a large non-stick frying pan over medium-high heat. Cook onion, garlic and celery for 5-7 mins or until softened, then transfer vegetables to a large bowl.
  3. Meanwhile, process bread until crumbs form. Transfer to bowl with onion mixture. Add remaining ingredients and stir to combine. Using damp hands, roll level tbs of mixture into 24 balls. Place balls on prepared tray. Bake for 20 mins or until browned and heated through.

Notes

TIP: You can use dried cranberries or dried diced apple instead of dried apricots.
