Ingredients

Avocado

¼ medium, diced

Cherry tomatoes

8 individual, quartered

Dried chilli flakes

¼ tsp, pinch (optional)

Lemon juice

½ tsp

Light rye bread

2 slice(s), (2 x 40g slices)

Reduced-fat ricotta cheese

2 tbs

Fresh chives

2 tsp, finely chopped

Instructions

Place avocado, tomato, chilli (if using) and juice in a small bowl. Stir to combine.

Toast bread and top with ricotta and avocado mixture. Sprinkle with chives and season with salt and freshly ground black pepper. Serve.
