Rosemary and thyme pork sandwich

Ingredients
Brown onion
1 large, finely chopped
Lean pork mince
400 g
Fresh rosemary
1 tsp, finely chopped
Fresh thyme
½ tsp, finely chopped
Fennel seeds
½ tsp
Egg(s)
1 medium, beaten
Wholemeal bread
280 g, (8 x 35g), toasted
Dijon mustard
2 tsp
Iceberg lettuce
4 leaf, leaves
Oil spray
1 x 3 second spray(s)
Instructions

Place onion, pork, rosemary, thyme, fennel and egg in a medium bowl and mix with clean hands until well combined. Shape mixture into 4 patties about 1.5cm thick.

Lightly spray a chargrill pan or frying pan with oil and heat over medium heat. Cook patties for 10 minutes, turning occasionally, or until cooked through. Spread 4 slices of bread with mustard, top each with a patty and lettuce. Sandwich with remaining bread. Serve.
