Rocket, pear and prosciutto salad

This fancy sweet and salty salad makes a perfect side dish to accompany a dinner party or special occasion.

Ingredients

Vinegar

2 tbs, red wine

Olive oil

1 tbs

Whole grain mustard

1 tbs

Honey

1 tbs

Prosciutto fat trimmed

6 slice(s), fat trimmed

Rocket

120 g, (baby)

Pear(s)

3 medium, cut into thin wedges

Soft goat's cheese

60 g, (soft), crumbled

Pecans

30 g, chopped

Instructions

To make honey mustard dressing, whisk vinegar, oil, mustard and honey together in a small bowl.

Preheat your grill to high. Place prosciutto, in a single layer, on a grill tray. Grill for 3-4 mins or until crisp. Set aside to cool, then break into pieces.

Arrange the baby rocket, pear, cheese and nuts on 6 large plates. Scatter with prosciutto and drizzle with dressing just before serving.
