Rocket, pear and prosciutto salad

This fancy sweet and salty salad makes a perfect side dish to accompany a dinner party or special occasion.
2 tbs, red wine
Whole grain mustard
Prosciutto fat trimmed
6 slice(s), fat trimmed
120 g, (baby)
3 medium, cut into thin wedges
Soft goat's cheese
60 g, (soft), crumbled
30 g, chopped
- To make honey mustard dressing, whisk vinegar, oil, mustard and honey together in a small bowl.
- Preheat your grill to high. Place prosciutto, in a single layer, on a grill tray. Grill for 3-4 mins or until crisp. Set aside to cool, then break into pieces.
- Arrange the baby rocket, pear, cheese and nuts on 6 large plates. Scatter with prosciutto and drizzle with dressing just before serving.
You can make this salad using peaches, raspberries, strawberries or figs instead of pears.
