Roast salmon with za'atar

This simple dish is packed with flavour. Za’atar is a blend of spices and sesame seeds that’s nutty and fragrant. Plus, slow-roasting the fish keeps it tender and succulent.


Ingredients
Potato(es)
800 g, new variety, quartered
Ground cumin
1 tsp
Chilli powder
½ tsp, plus extra to serve
Za'atar seasoning
3 tsp
Fresh lemon rind
2 tsp, finely grated
Skinless salmon
480 g, (buy 4 x 120g)
Fresh flat-leaf parsley
⅓ cup(s), to serve
Oil spray
1 x 3 second spray(s)

Preheat oven to 200°C. Line a baking tray with baking paper. Place potatoes on prepared tray and lightly spray with oil. Sprinkle potatoes with cumin and chilli powder and toss to combine. Season with salt and pepper. Bake for 35 minutes.

Meanwhile, sprinkle za’atar and lemon rind over salmon and rub in to coat. Stir potatoes, then place salmon fillets on top of potatoes. Bake for 10 minutes or until potatoes are golden and salmon is cooked to your liking. Sprinkle with parsley and extra chilli powder to serve.
