Red curry beef patties with herb and sprout salad

Tasty little meatballs that only require two ingredients, mince and red curry paste. Served with a fresh green salad and a drizzle of lime juice.


Ingredients
Extra lean beef mince, raw
400 g
Red curry paste
1½ tbs
Red curry paste
1 tsp, extra
Bean sprouts
3 cup(s), (105g)
Cucumber
1 medium, peeled into ribbons
Fresh red chilli
1 whole, thinly sliced
Fresh basil
¾ cup(s), Thai, leaves, torn
Fresh mint
¾ cup(s), leaves, torn
Lime juice
2 tbs
Sesame oil
3 tsp
Oil spray
1 x 3 second spray(s)

Combine mince and 1½ tbs curry paste in a medium bowl. Season. Shape mixture into 8 x 2cm-thick patties. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook patties for 3-4 minutes each side or until cooked through.

Meanwhile, combine bean sprouts, cucumber, chilli, basil and mint leaves, in a large bowl. Whisk lime juice, sesame oil and 1 tsp red curry paste in a small bowl until combined. Add dressing to salad and toss to combine. Serve salad with beef patties.
