If you’re vegetarian or simply trying to eat less meat, Quorn is a convenient substitute for chicken in this flavoursome Mexican dish.

Ingredients

Quorn Plant-Based Meat, Fillets

600 g, pieces

Red capsicum

1 medium, cut into thick strips

Yellow capsicum

1 medium, cut into thick strips

Red onion

1 medium, thinly sliced

Smoked paprika

2 tsp

Ground cumin

2 tsp

Chilli powder

½ tsp

White wrap

160 g, (4 x 40g wraps), warmed

Light sour cream

1 tbs

Extra light cheddar cheese

50 g, grated

Lime(s)

1 medium, wedges, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook Quorn for about 5 minutes, stirring, until golden. Add capsicums, onion and spices, season with salt and pepper and cook for a further 8-10 minutes, stirring, until vegetables are soft.
  2. Top each wrap with a quarter of the Quorn mixture, sour cream and cheese. Add a squeeze of lime juice, then roll up to serve.
