Start your day with a nutritious and delicious porridge. This easy-to-make breakfast recipe features quinoa cooked in oat milk, creating a creamy and satisfying base. Enhanced with the warm flavours of ground cinnamon and the rich taste of almond butter, topped with toasted pecans and fresh red grapes for a delightful crunch and natural sweetness. Perfect for a healthy, protein and fibre rich breakfast to keep you energised throughout the morning.

Ingredients

Tri-colour quinoa

½ cup(s), (85g)

Unsweetened oat milk

150 ml

Pecans

20 g, roughly chopped

Ground cinnamon

1 tsp

Almond butter (100% nuts)

2 tsp

Grapes

50 g, seedless, red variety, cut in half

Instructions

  1. Combine quinoa, oat milk and ¾ cup (185ml) water in a large saucepan. Bring to the boil over a medium heat. Reduce heat to low and simmer, adding more water as needed, for 25-30 minutes, or until just cooked.
  2. Meanwhile, cook pecans in a frying pan over medium heat for 2-3 minutes, until lightly toasted. Add cinnamon and almond butter to quinoa and mix to combine. Divide porridge between 2 serving bowls. Sprinkle with pecans and grapes. Serve.
