Quick pork and ramen stir-fry

A super simple pork, noodle and veg stir-fry in 20 minutes is a great mid-week meal.


Ingredients
Fresh ramen noodles
150 g
Pork fillet or tenderloin, raw
320 g, (Buy 400g) fat trimmed, thinly sliced
Red onion
1 medium, cut into wedges
Broccoli
300 g, cut into florets
Red capsicum
1 medium, thinly sliced
Green string beans
200 g, halved
Oyster sauce
2 tbs
Honey
3 tsp
Lemon juice
2 tbs
Green shallot(s)
2 individual, sliced diagonally
Oil spray
2 x 3 second spray(s)
Instructions

Place noodles in a large heatproof bowl and cover with boiling water. Stand for 5-10 minutes to soften. Drain.

Meanwhile, lightly spray a large non-stick frying pan or wok with oil and heat over medium-high heat. Stir-fry pork in batches, for 1-2 minutes each side or until just cooked through. Transfer to a plate and set aside.

Lightly spray pan with oil and stir-fry onion for 1-2 minutes. Add broccoli, capsicum and beans and stir-fry for 1-2 minutes. Add a splash of water to create steam. Return pork to pan with oyster sauce, honey and juice. Toss to coat. Add drained noodles and toss to combine. Sprinkle with sliced green onion to serve.
