Settle in for a Sunday-night movie with these quick and easy pizzas.

Ingredients

wholemeal lebanese bread

2 individual, (2 x 75g)

tomato passata

½ cup(s), (125ml)

mushrooms

125 g, button variety, sliced

Artichoke hearts, canned, rinsed, drained

400 g, (1 x 400g can), quartered

prosciutto fat trimmed

50 g, torn

bocconcini

100 g, cherry variety, halved

dried chilli flakes

½ tsp

fresh basil

¼ cup(s), leaves

oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat grill on medium-high (see note). Place bread on 2 baking trays and lightly grill both sides.
  2. Spread bread with passata. Top with mushrooms, artichokes, prosciutto and bocconcini. Sprinkle with chilli flakes and lightly spray with oil.
  3. Grill pizzas for 5 minutes or until cheese has melted and mushrooms are cooked. Cut in half and sprinkle with basil to serve.

Notes

SERVING SUGGESTION: Rocket leaves and cherry tomatoes, drizzled with balsamic vinegar.TIP: If possible, lower the grill shelf so it is about 10cm from the element as this will allow the pizza to cook through without burning.
