Quick cauliflower fried 'rice'

This all-veggie take on fried rice uses convenient, quick-cooking cauliflower rice in place of grains and loads on more plant-based goodness with cabbage, carrots, and snow peas. You can always add a source of protein in the form of scrambled eggs or cooked chicken or pork—whatever you have on hand.


Ingredients
Green cabbage
2 cup(s), (170g)
Carrot(s)
1 medium, finely chopped
Fresh ginger
2 tsp
Garlic
3 clove(s), crushed
Snow peas
250 g, sliced on the diagonal
Green shallot(s)
4 individual
Cauliflower
480 g, rice
Reduced salt soy sauce
2 tbs
Rice wine vinegar
3 tsp
Instructions

Lightly spray a large non-stick frying pan with oil. Heat pan over medium-high heat. Add cabbage, carrots, ginger and garlic and stir-fry for 2 minutes.

Add snow peas, shallots and cauliflower ‘rice’. Stir-fry for 3-5 minutes or until tender crisp. Remove from heat and stir in soy sauce and vinegar.
