Forget what you know about a traditional roast – this version guarantees delicious, tender meat and perfectly cooked vegies. Perfect for a Sunday family dinner

Ingredients

Beef fillet (tenderloin), raw

600 g, (Buy 750g) fat trimmed

Fresh thyme

1 tbs

Fresh rosemary

1 tbs, finely chopped

Garlic

2 clove(s), thinly sliced

Prosciutto fat trimmed

135 g, (Buy 150g) fat trimmed, thin slices

Broccoli

600 g, florets

Frozen green peas

1½ cup(s), (180g)

Reduced fat oil spread

3 tsp

Horseradish cream

1½ tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Top beef with thyme, rosemary and garlic. Wrap prosciutto around the f illet, slightly overlapping each slice. Set aside.
  2. Lightly spray beef with oil and cook for 15–20 minutes each side or until cooked to your liking. Transfer to a plate. Cover beef with foil and rest for 5 minutes before slicing thickly.
  3. Meanwhile, boil, steam or microwave broccoli and peas, separately, until tender. Drain. Place in a large bowl with spread and toss to combine. Season with salt and pepper.
  4. Serve vegetables with beef and horseradish cream.

Notes

TIP: You can use lean pork fillet instead of beef. The cooking time will be halved.
