Prawns with ginger and garlic

Ingredients
Peanut oil
1 tbs
Raw peeled prawns
500 g, deveined, peeled, tails intact, (buy 1 kg)
Garlic
2 clove(s), thinly sliced
Fresh ginger
2 tsp, finely grated
Green shallot(s)
2 individual, cut into 2cm lengths
Soy sauce
1 tbs
Oyster sauce
2 tbs
Chicken stock
2 tbs
Fresh red chilli
1 g, thinly sliced
Sesame seeds
1 tsp, toasted
Instructions

Heat a wok over high heat. Add half the oil and heat for 30 seconds. Stir-fry prawns for 2–3 minutes or until prawns change colour and are just cooked through. Transfer to a plate.

Reheat wok over high heat. Add remaining oil and heat for 30 seconds. Add garlic, ginger and shallots and stir-fry for 30 seconds. Add soy and oyster sauces and stock and stir-fry for 30 seconds.

Return prawns to wok and stir-fry for 1 minute or until heated through. Serve prawns sprinkled with chilli and sesame seeds.
