This lightning-quick dish for one can easily be scaled up for a group of any size. It also makes a great appetizer with tortilla chips or crackers.

Ingredients

Cooked peeled prawns

100 g, deveined, chopped

Tomato(es)

½ small, finely chopped

Lebanese cucumber

½ small, finely chopped

Red onion

¼ small, finely chopped

Lime juice

2 tbs, fresh

Fresh coriander

1 tbs, chopped

Instructions

  1. Combine prawns, tomato, cucumber, onion and lime juice in a medium bowl. Cover and stand for 10 minutes to allow the flavours to blend.
  2. Add coriander and season with salt and black pepper. Toss well. Transfer to a serving bowl to serve.
