Try this noodle salad with prawns for an authentic Japanese flavour when entertaining friends and family.

Ingredients

Dry soba noodles (100% buckwheat)

180 g

Carrot(s)

3 medium, halved lengthways, thinly sliced

Reduced salt soy sauce

2 tbs

Lime juice

2 tbs

Fresh red chilli

1 whole, deseeded, finely chopped

Fresh ginger

1 tbs, (1 x 2cm piece) peeled, finely chopped

Cooked peeled prawns

375 g, (or buy 750g shell-on prawns, then peel and devein)

Lebanese cucumber

3 medium, halved lengthways, thinly sliced

Avocado

1 medium, coarsely chopped

Snow pea sprouts

50 g, trimmed

Instructions

  1. Bring a large saucepan of salted water to the boil. Add the noodles and carrot. Cook for 3 minutes or until noodles are just tender. Drain. Rinse under cold water. Drain well. Transfer to a large bowl. Set aside to cool slightly.
  2. Meanwhile, combine the soy sauce, lime juice, chilli and ginger in a small bowl.
  3. Add soy dressing, prawns, cucumber, avocado and sprouts to noodle mixture. Toss gently to combine.

Notes

TIP: Soba noodles are a Japanese-style noodle made from buckwheat flour. You can replace them with any other Asian-style noodle.
