Portuguese chicken marinade
¾ cup(s), (185ml)
¼ cup(s), (60ml)
3 clove(s), coarsely chopped
1 tbs, 3cm piece, peeled, finely grated
Fresh red chilli
- Use a hand-held mixer or a small food processor to process all ingredients until well combined. Place in a 1 cup (250ml) sterilised jar and seal. Store in fridge for up to 1 week. Makes 1 x 200ml jar.
One serve: 1 tbs. TIP: Portuguese Chicken Marinade makes enough for two whole chickens. Marinate for 4 hours or overnight before roasting in a hot oven.
