Port-poached cherries with cardamom yoghurt

Get in to the Christmas spirit with this spiced cherry dessert.

Ingredients

Caster sugar

¼ cup(s)

Port

½ cup(s), (125ml)

Cherries

300 g, (or frozen, thawed)

Plain or natural yoghurt, low-fat, no added sugar

200 g

Cardamom

tsp, ground

Honey

1 tbs

Instructions

  1. Place sugar and port in a medium saucepan over high heat and bring to the boil. Reduce heat to low and simmer for 2 minutes or until sugar dissolves. Add cherries and simmer, stirring occasionally, for 5 minutes or until cherries are plump and heated through. Remove from heat and set aside to cool slightly.
  2. Combine yogurt, cardamom and honey in a small bowl. Divide cherries among serving bowls. Serve warm or cold with yogurt.

Notes

Cardamom is a popular Indian spice that has a warm, spicy sweet flavour and aroma. It can be quite strong so a little bit goes a long way.
