Slices of Pink Lady apples and celery add crunch to this salad that was invented at New York's famous Waldorf Hotel in the late 1800s

Ingredients

Baked trimmed pork leg roast

500 g, shredded

Red apple, unpeeled

2 medium, thinly sliced

Fennel bulb(s)

1 small, thinly sliced

Celery

2 individual, thinly sliced

Green shallot(s)

2 individual, thinly sliced

Low-fat mayonnaise

2 tbs

Lemon juice

1 tbs

Cos lettuce

70 g

Instructions

  1. Place pork, apples, fennel, celery and shallots in a large bowl. Whisk mayonnaise and juice in a small bowl. Add to salad, season with salt and freshly ground black pepper and toss to combine.
  2. Place baby cos leaves on a serving platter, top with pork mixture and serve.

SERVING SUGGESTION: Toasted sourdough bread.
