1 tsp

Fresh ginger

25 g, finely grated

Garlic

Chilli oil

Instructions

1

Lightly spray a large, nonstick frying pan and heat over medium heat. Cook pork for 8-10 minutes, stirring, until browned. Add spices, ginger and garlic and cook for a further 1-2 minutes. Stir in 1 tablespoon soy sauce and remove from heat. Cover with foil to keep warm.

Meanwhile, cook noodles according to packet instructions, adding the quartered shallots and pak choy for the last minute of the cook time. Drain and set aside.

3

To make the sauce, pour 200ml of boiling water from the kettle into a small heatproof bowl. Add soy sauce and tahini and whisk until smooth. Stir in chilli oil and set aside.

4

Divide sauce between 4 serving bowls. Top with noodles, vegetables and mince. Sprinkle with sliced shallots and peanuts. Serve.
