These spicy noodles with pork mince are super-quick to prepare and sure to become a midweek favourite. A soy, chilli and tahini sauce really packs in the flavour.

Ingredients

Extra lean pork mince

500 g

Ground coriander

1 tsp

Chinese five spice

1 tsp

Fresh ginger

25 g, finely grated

Garlic

3 clove(s), finely grated or chopped

Soy sauce

1 tbs

Dried egg noodles

200 g

Green shallot(s)

6 individual, 2 thinly sliced, the rest quartered

Pak choy

1 bunch(es)

Raw peanuts

35 g, roughly chopped

Soy sauce

3 tbs

Tahini

2 tbs

Chilli oil

3 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large, nonstick frying pan and heat over medium heat. Cook pork for 8-10 minutes, stirring, until browned. Add spices, ginger and garlic and cook for a further 1-2 minutes. Stir in 1 tablespoon soy sauce and remove from heat. Cover with foil to keep warm.
  2. Meanwhile, cook noodles according to packet instructions, adding the quartered shallots and pak choy for the last minute of the cook time. Drain and set aside.
  3. To make the sauce, pour 200ml of boiling water from the kettle into a small heatproof bowl. Add soy sauce and tahini and whisk until smooth. Stir in chilli oil and set aside.
  4. Divide sauce between 4 serving bowls. Top with noodles, vegetables and mince. Sprinkle with sliced shallots and peanuts. Serve.

Notes

If you have both kinds of soy sauce in your pantry, use dark soy for the pork and light for the sauce.
