Pork cutlets with apple sauce

A true classic! Freshly made apple sauce is simple to make and adds the moist, sweet and salty freshness that this pork dish needs.


Ingredients
Pumpkin
600 g, cut into wedges
Olive oil
1 tbs
Brown onion
1 medium, finely chopped
Garlic
1 clove(s), crushed
Green apple, unpeeled
3 medium, chopped
Chicken stock
½ cup(s), (125ml)
Pork fillet or tenderloin, raw
480 g, (buy 4x150g cutlets)
Frozen green peas
2 cup(s), (240g)
Oil spray
2 x 3 second spray(s)

Preheat oven to 200°C or 180°C fan-forced. Line a large baking tray with baking paper. Place pumpkin on prepared tray and lightly spray with oil. Season with salt and pepper. Bake for 45 minutes or until golden and tender.

Meanwhile, heat oil in a medium saucepan over medium heat. Add onion and garlic and cook, stirring, for 5 minutes or until softened. Add apples and stock and bring to the boil. Reduce heat and simmer, covered, for 10 minutes or until apples have softened. Process apple mixture in a food processor until smooth.

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook pork for 5 minutes each side or until browned and cooked through. Cover pork with foil and set aside to rest for 10 minutes.

Meanwhile, boil, steam or microwave peas until tender. Drain. Serve pork with pumpkin, peas and apple sauce.
