Up your veg intake with these pork and veg burgers


Ingredients
Pork mince, raw
400 g, extra lean
Dried breadcrumbs
35 g, white, made from one day old bread
Carrot(s)
1 small, finely grated
Zucchini
1 small
Plum sauce
1 tbs
Olive oil
2 tsp
Mountain bread
4 individual, wholewheat variety
Mixed salad leaves
50 g
Instructions

Combine the mince, breadcrumbs, carrot, zucchini and plum sauce in a large bowl. Season with freshly ground black pepper. Mix until well combined. Shape the mixture into 16 patties.

Heat the oil in a large non-stick frying pan over medium-high heat. Cook the patties, in batches, for 3-4 minutes each side or until golden and cooked through.

Place 4 patties on each slice of bread. Top with salad leaves and wrap to serve.
