Ingredients
Olive oil
1 tbs
Brown onion
1 medium, chopped
Garlic
2 clove(s), crushed
Veal mince
375 g
Lean pork mince
375 g
Carrot(s)
1 medium, grated
Zucchini
1 medium, peeled, grated
Pistachios
⅓ cup(s), (45g), chopped
Fresh herbs
20 g, (marjoram)
Wholemeal flat bread
35 g, made into breadcrumbs
Egg(s)
1 medium, lightly beaten

Preheat oven to 200°C or 180°C fan-forced. Line base and sides of a 11cm x 21cm loaf tin with baking paper. Heat oil in a saucepan over medium heat. Add onion and garlic and cook, stirring, for 3 minutes or until softened. Cool.

Combine mince, carrot, zucchini, pistachios, marjoram, breadcrumbs, egg and onion mixture in a medium bowl. Season with salt and freshly ground black pepper. Press mixture into prepared tin and smooth surface. Bake for 40 minutes or until cooked through. Stand for 5 minutes. Drain excess fat before thickly slicing and serving.
