Pork and bean burritos

Ingredients
Brown onion
1 medium, thinly sliced
Garlic
1 clove(s), crushed
Lean pork mince
350 g
Seasoning
1 tbs, (Mexican spice mix)
Canned diced tomatoes
400 g
Canned red kidney beans, rinsed, drained
1 can(s), (Buy 1 x 400g can)
Avocado
½ small, coarsely chopped
Lime juice
2 tsp
Flour tortilla(s)
192 g, (4 x 48g)
Extra light cheddar cheese
⅓ cup(s), grated, (30g)
Cos lettuce
1 cup(s), (4 torn leaves)
Red onion
½ medium, thinly sliced
Oil spray
1 x 3 second spray(s)

Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook onion and garlic, stirring, for 4 minutes or until soft. Add the pork and cook, using a wooden spoon to break up any lumps, for 3 minutes or until browned.

Add the spice mix, tomato and beans. Bring to the boil then reduce heat and simmer, uncovered, for 10 minutes or until the mixture thickens.

Meanwhile, place the avocado and lime juice in a small bowl and stir to combine. Season with salt and pepper.

Heat the tortillas following packet instructions. Divide the tortillas among serving plates. Top with the mince mixture, cheese, lettuce, red onion and avocado mixture and roll up to enclose the filling.
