Pork and apple rissoles with carrot salad

Enjoy the classic combination of pork and apple any night of the week with these easy to make rissoles. A crunchy carrot and walnut salad is a great partner to this mid-week dish.


Ingredients
Iceberg lettuce
1 cup(s), shredded, cut into wedges
Lean pork mince
500 g
Green apple, unpeeled
2 large, coarsely grated
Wholemeal bread
1 slice(s), (35g) breadcrumbs, stale
Onion flakes
1 tbs
Dried herbs
½ tsp, mixed
Olive oil
2 tsp
Carrot(s)
2 medium, coarsely grated
Light whole egg mayonnaise
2 tbs
99% fat-free, plain Greek yoghurt, unsweetened
2 tbs
Walnuts
2 tbs, chopped

Combine pork, apple, breadcrumbs, onion flakes and mixed herbs in a bowl. Season and mix until well combined. Shape mixture into 8 rissoles. Heat oil in a non-stick frying pan over medium heat. Cook rissoles for 4-5 minutes each side or until cooked through.

Meanwhile, coarsely grate carrot and apple. Combine in a large bowl with mayonnaise and yoghurt. Season.

Serve rissoles with carrot salad, lettuce wedges and sprinkle with walnuts.
