Mini meatballs are a perfect pre-dinner snack as you can eat them with one while elegantly balancing your glass in the other.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Garlic

2 clove(s), crushed

Fresh ginger

2 tsp, finely grated

Apple(s)

1 medium, grated

Dried breadcrumbs

¾ cup(s), (50g), wholemeal

Lean pork mince

500 g

Barbecue sauce

¼ cup(s), (60ml)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Heat oil in a small non-stick frying pan over medium heat. Cook onion, garlic and ginger, stirring, for 5 minutes or until onion has softened. Transfer to a large bowl.
  2. Squeeze excess moisture from grated apple. Add breadcrumbs, mince, barbecue sauce and grated apple to onion mixture. Stir to combine. Roll level tablespoons of mixture into 30 balls.
  3. Lightly spray a large non-stick frying pan with oil and heat over medium–high heat. Cook meatballs, in 2 batches, turning occasionally, for 8-10 minutes or until golden and cooked through.

Notes

TIPS: You can prepare the meatballs a day ahead. Store uncooked meatballs in an airtight container in the fridge until required. Uncooked meatballs suitable to freeze for up to 1 month.
