Poached apple, pear and blackberries

This elegant compote is best enjoyed at room temperature to bring out the full flavours of the gently poached fruit


Ingredients
Green apple, unpeeled
6 medium, peeled, cored, cut into wedges
Pear(s)
6 medium, firm, peeled, cored, cut into wedges
No added sugar orange juice
⅔ cup(s), (160ml)
Orange rind
2 tsp, finely grated
Caster sugar
1½ tbs
Frozen blackberries
200 g, thawed
Vanilla yoghurt, 99% fat-free, no added sugar
500 g, (175g each)
Ground LSA seed mix (linseed, sunflower, almond)
¼ cup(s), (40g)
Instructions

Combine apple, pear, juice, rind and sugar in a large saucepan over medium-high heat. Bring to the boil. Reduce heat and simmer, covered, for 8–10 minutes or until fruit is just tender. Cool.

Fold blackberries into cooled fruit mixture. Serve topped with yoghurt and LSA mix.
