Presto, pesto! The classic Italian basil sauce is the secret weapon in this quick-fire recipe. Mixed into the meat, it lends bold flavour while keeping the turkey extra juicy.


Ingredients
Turkey breast mince
500 g
Dried breadcrumbs
¼ cup(s), (20g)
Basil pesto
¼ cup(s), (65g)
Red onion
1 medium, cut into 1cm-thick slices
Whole grain bread roll
4 individual, split and toasted, (4 x 50g round rolls)
Low-fat mayonnaise
2 tbs
Tomato(es)
1 large, thickly sliced
Oil spray
2 x 3 second spray(s)

Place turkey, breadcrumbs and pesto in a large bowl. Season with salt and pepper and mix until well combined. Divide mixture into 4 equal portions. Shape each portion into a 2.5cm-thick patty.

Lightly spray both sides of turkey patties and onion slices with oil. Heat a large non-stick grill pan or barbecue over medium-high heat. Cook patties and onion slices for 4-5 minutes on each side, until patties are cooked through and onions are browned and tender.

Spread 2 teaspoons mayonnaise over the bottom half of each roll. Top each with a patty, then top evenly with onion and tomato slices. Cover with roll tops.
