Ingredients

Shortcut bacon

75 g, chopped

Salt

600 g, rock

Worcestershire sauce

3 tsp

Tomato passata

¼ cup(s), (60ml)

Green shallot(s)

1 individual, finely chopped

Tabasco sauce

1 tsp, (4-5 drops)

Oysters

12 individual, shucked

Fresh flat-leaf parsley

1 tbs, finely chopped

Lemon(s)

1 medium, cut into wedges

Oil spray

2 x 3 second spray(s)

Lightly spray a small non-stick frying pan with oil and heat over high heat. Cook bacon, stirring, for 2-3 minutes or until golden and crisp. Transfer to a plate lined with paper towel.

Preheat grill on high. Combine Worcestershire sauce, passata, shallot and Tabasco in a small bowl. Place rock salt on a baking tray and sit oysters in salt so they sit flat. Top each oyster with 1 teaspoon of sauce mixture, then sprinkle with bacon. Grill for 1-2 minutes or until sauce is bubbling.

Serve oysters immediately with oyster forks or cocktail picks, sprinkled with parsley along with lemon wedges.
