Ingredients

reduced fat oil spread

¼ cup(s), (60g), melted

egg(s)

2 medium

caster sugar

¼ cup(s), (55g)

orange rind

1 tbs, finely grated

plain flour

¾ cup(s), (115g)

baking powder

1 tsp

ground cinnamon

1 tsp

freshly squeezed orange juice

1 tbs

icing sugar

1 tsp

Instructions

  1. Preheat oven to 180°C. Using 2 teaspoons of spread, lightly grease 20 holes of two 12-hole madeleine tins.
  2. Using electric beaters, beat eggs, sugar and rind in a large bowl until thick and pale. In a medium bowl, sift flour, baking powder and cinnamon together 3 times. Using a large metal spoon, gently fold flour mixture into egg mixture with remaining spread and juice.
  3. Spoon mixture among prepared holes. Bake for 8 minutes or until golden and firm to the touch. Set aside in tins for 2 minutes before transferring to a wire rack to cool. Dust with icing sugar.
