Orange souffle puddings

Puffed and golden puddings dusted with a snow-like sprinkling of icing sugar make a delicious sweet.


Ingredients
Reduced fat oil spread
2 tbs, (40g)
Orange rind
1 tsp, finely grated
Caster sugar
¼ cup(s), (55g)
Vanilla bean extract
1 tsp
Plain flour
⅓ cup(s), (50g)
Skim milk
1 cup(s), (250ml)
No added sugar orange juice
2 tbs
Fresh strawberries
125 g
Icing sugar
1 tsp
Oil spray
2 x 3 second spray(s)
Egg(s)
2 medium, separated

Preheat oven to 200°C or 180°C fan-forced. Lightly spray four ¾ cup (185ml) soufflé dishes with oil.

Using electric beaters, beat spread, rind, sugar and vanilla in a mixing bowl until pale and creamy. Beat in the egg yolks. On low speed, beat in the flour. Add the milk and juice and beat until combined.

Using clean, dry electric beaters, beat egg whites in a separate bowl until soft peaks form. Gently fold egg whites into orange mixture, in 2 batches, until just combined.

Divide mixture among prepared dishes. Bake for 18–20 minutes or until puffed and lightly browned. Serve immediately with strawberries and dusted with icing sugar.
