Orange and ginger glazed turkey with sweet potato mash

This sweet dinner, with all the toppings of a Sunday roast, is ready in umder 30 minutes.

Ingredients

Orange sweet potato (kumara)

700 g, peeled, chopped

Olive oil

1 tbs

Skinless turkey breast

500 g, (Buy 4 x 125g breasts)

Fresh ginger

1 tsp, (1 x 3cm piece) shredded

Orange zest

1 tsp

Freshly squeezed orange juice

¼ cup(s), (60ml)

Salt reduced chicken stock

¼ cup(s), (60ml)

Honey

2 tsp

Instructions

  1. Steam the sweet potato over a saucepan of boiling water for 6-8 minutes or until tender. Drain and mash until smooth. Cover to keep warm.
  2. Meanwhile, heat the oil in a large non-stick frying pan over high heat. Cook the turkey for 2-3 minutes each side or until golden. Transfer to a plate. Cover to keep warm.
  3. Return the pan to medium heat. Cook the ginger, stirring, for 30 seconds. Add the orange zest, orange juice, stock and honey. Bring to the boil and simmer for 3-4 minutes or until the sauce is reduced by half.
  4. Serve the turkey with the mash and drizzle with the sauce.

SERVING SUGGESTION: Steamed Brussels sprouts.
