Open Mexican Turkey burgers

Only taking 30 minutes to prepare and cook, these turkey burgers topped with fresh salsa are perfect for a mid-week summer meal.


Ingredients
Olive oil
1 tbs
Red onion
1 medium, finely chopped
Garlic
2 clove(s)
Chilli powder
1 tsp, (Mexican)
Skinless turkey breast
500 g, minced
Tomato(es)
2 medium, finely chopped
Lebanese cucumber
1 medium
Fresh coriander
¼ cup(s)
Multigrain bread roll
120 g, (2 x 60g rolls) split
Butter lettuce
½ cup(s), shredded, (4 leaves)
Avocado
½ large, thinly sliced
Oil spray
1 x 3 second spray(s)

Heat oil in a small non-stick frying pan over medium heat. Cook half the onion, stirring, for 3 minutes or until softened. Add garlic and chilli powder and cook, stirring, for 30 seconds. Transfer to a large bowl. Cool.

Add mince to onion mixture and mix to combine. Divide mixture into 4 equal portions. Gently press each portion into a 9cm patty.

Preheat a chargrill or barbecue over medium-high heat. Lightly spray patties with oil and cook for 3–4 minutes each side or until cooked through.

Meanwhile, combine remaining onion, tomatoes, cucumber and coriander in a small bowl. Season salsa with salt and pepper.

Chargrill bread rolls, cut-side down, for 1–2 minutes or until lightly toasted. Place 1 roll half on each serving plate. Top with lettuce, turkey patties, avocado and salsa. Serve.
