Simple yet delicious, you can’t go wrong with this flavour combination. Perfect for a lunch time delight.

Ingredients

Reduced fat oil spread

2 tbs

Caster sugar

¼ cup(s), (55g)

Apple cider vinegar

30 ml, (1.5 tbs)

Red onion

3 medium, cut into 5mm-thick rings

Fresh bay leaf

2 whole

Fresh thyme

1 tbs

Reduced-fat puff pastry

1 sheet(s), just thawed

Soft goat's cheese

60 g, crumbled

Rocket

40 g, baby

Instructions

  1. Preheat oven to 220°C.
  2. Melt the spread and sugar together in a 24cm-round (base measurement), ovenproof frying pan over medium heat. Cook, without stirring, for 5 minutes or until starting to turn golden. Stir in vinegar. Cook for 30 seconds.
  3. Place the bay leaves in sugar mixture. Arrange onion slices, side by side, in a single layer, in pan. Sprinkle with the thyme. Place the pastry sheet over the onion in pan, tucking in the edges.
  4. Bake for 20-25 minutes or until pastry is golden and puffed. Stand the tarte in the pan for 2 minutes. Carefully turn out onto a plate. Discard bay leaves. Serve sprinkled with the cheese and rocket.
