One-pot taco pasta

Here we combine two family favourites, pasta and tacos. Pulse-based pasta brings the protein and fibre, salsa brings the freshness and pickled jalapeños bring the heat for a super satisfying one-pan meal.


Ingredients
Extra lean beef mince, raw
360 g
Onion
1 large, finely chopped
Garlic
3 clove(s), crushed
Ground cumin
1 tsp
Chilli powder
1 tsp
Canned diced tomatoes
400 g
Spaghetti pasta
250 g
Light tasty cheese
½ cup(s), grated
Pickled jalapenos
3 tbs, 1/4 cup, (optional)
Fresh coriander
1 tbs, chopped
Tomato(es)
1 medium, halved, deseeded, finely chopped
Red onion
½ small, finely chopped
Jalapenos
1 individual, finely chopped

Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook mince, onion, garlic, cumin and chilli, stirring to break up lumps, for about 5 minutes or until browned.

Stir in tomatoes and 2½ cups water and bring to the boil. Break pasta in half and add to the pan. Stir gently to coat pasta in sauce. Cover and reduce heat to medium-low. Simmer for 10-12 minutes, until pasta is tender and most of the liquid is absorbed.
