Ingredients

Rolled oats, dry

⅓ cup(s), (30g)

Banana(s)

1 medium, mashed

Unsweetened almond milk

⅓ cup(s), (80ml)

Ground cinnamon

1½ tsp

Mixed spice

½ tsp

Baking powder

½ tsp

Currants

9 g

Apple(s)

½ medium, grated

Orange rind

1 tsp, finely grated

Sugar-free maple syrup

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

¼ cup(s), (60g), to serve

Fresh blueberries

¼ cup(s), to serve

Instructions

Preheat oven or air-fryer to 180℃.

Combine oats, half the banana, almond milk, 1 teaspoon cinnamon, mixed spice, baking powder and a pinch of salt in a large bowl. Add currants, half the apple and rind and stir until combined. Spread mixture into a 2 cup (500ml) capacity round shallow ovenproof dish. Bake in oven for 30 minutes or Airfryer for 15 minutes or until golden and firm to the touch.

Meanwhile, heat a small frying pan over low heat and line with a WW pan liner. Combine remaining banana, remaining grated apple, remaining cinnamon and syrup in a small bowl. Add to pan, cook, stirring for 5 minutes or until apple is soft and slightly caramelised.

Serve baked oats with apple mixture, yoghurt and blueberries.
