Mustard maple chicken with parmesan broccoli and cauliflower

This unusual maple-syrup chicken dish is ready in only 35 minutes. A side of cheesy vegetables is the perfect finishing touch.


Ingredients
Olive oil
1 tbs
Skinless chicken breast
500 g, (4x125g)
Whole grain mustard
1 tbs
Maple syrup
1 tbs
Brown onion
1 medium, thinly sliced
Broccoli
200 g, cut into florets
Cauliflower
200 g, cut into florets
Grated parmesan cheese
⅓ cup(s), (25g)
Instructions

Preheat oven to 200°C or 180°C fan-forced. Line a baking dish with baking paper. Heat half the oil in a non-stick frying pan over high heat. Add chicken and cook until browned. Transfer to baking dish. Combine mustard and maple syrup in a bowl, then drizzle over chicken. Bake for 15 minutes or until chicken is cooked.

Meanwhile, heat remaining oil in same frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Steam broccoli and cauliflower for 5–8 minutes or until tender, then place in warm serving dish. Sprinkle over onion and parmesan. Serve cooked vegetables with baked chicken.
