Mussels in chilli tomato sauce

If there’s ever been a recipe to create simple spicy seafood in a flash this is definitely it. In just 15 minutes you have a flavour packed traditional Mediterranean pot of goodness. Serve with bread so you don’t leave any of the spicy sauce behind.


Ingredients
Olive oil
1 tbs
Brown onion
1 medium, thinly sliced
Garlic
1 clove(s), thinly sliced
Fresh red chilli
1 whole, cut into thin strips
Canned diced tomatoes
800 g, (2 x 400g can)
Sweet-style white wine
60 ml, (¼ cup)
Mussels
1000 g, (1kg), cleaned
Baby spinach
200 g
Fresh flat-leaf parsley
½ cup(s), coarsely chopped
Soy and linseed bread

Instructions

Heat oil in a large saucepan over medium heat. Cook onion and garlic, stirring for 3-5 minutes or until softened.

Add chilli, tomatoes, wine and mussels and bring to the boil. Reduce heat and simmer, covered, for about 5 minutes or until opened.

Stir in spinach leaves and parsley. Season and serve.
