Instructions

1

Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 19cm x 29cm slice tin with oil. Line tin with baking paper, allowing paper to hang 5cm over the 2 long sides.

2

Combine dates and ½ cup (125ml) boiling water in a small heatproof bowl. Cover and set aside for 20 minutes to soften. Drain, reserving 2 tablespoons liquid. Process dates, reserved liquid and banana in a food processor until smooth.

3

Stir spread and sugar in a medium saucepan over medium heat until sugar has dissolved. Combine oats, wheat flakes, coconut, flour, sultanas, apricots, chia seeds and pepitas in a large bowl. Stir in spread and date mixtures until combined.

4

Press mixture firmly into prepared tin. Bake for 20–25 minutes or until golden and firm. Cool in pan before cutting into 16 slices. Serve.
