Moroccan chilli lamb skewers

A sprinke of exotic seasoning and a hint of chilli transforms these simple skewers into something special.

Ingredients

Moroccan seasoning

1 tbs

Fresh red chilli

1 whole, birdseye, deseeded, finely chopped

Raw lamb

400 g, lean, diced

Lebanese cucumber

1 medium

Tomato(es)

2 medium, cut into wedges

Red onion

1 small, finely chopped

Red capsicum

1 large, finely chopped

Reduced fat feta cheese

100 g, crumbled

Fresh flat-leaf parsley

2 tbs, chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine seasoning and chilli in a shallow dish. Add lamb and turn to coat. Cover and refrigerate for 30 minutes.
  2. Thread lamb onto 4 wooden skewers. Heat an oil-sprayed chargrill or barbecue over medium-high heat. Chargrill lamb for 2–3 minutes each side or until cooked to your liking.
  3. Using a vegetable peeler, cut cucumber into thin ribbons. Combine cucumber, tomato, onion, capsicum, feta and parsley in a medium bowl. Serve salad with the lamb skewers.
