This Halloween riff on avocado toast features mini rice cakes spread with mashed avocado and topped with ingredients to create witch and one-eyed monster faces. They’re best served shortly after assembling, but you can get a head start by cutting the nori into witch hat shapes, chopping the carrot, slicing the cheese stick, and having the sesame seeds and capers at the ready. For a more 3-D effect with the witch faces, arrange the carrot noses so that they stick up out of the avocado mixture.


Ingredients
Avocado
1 medium
Lime juice
1½ tsp
Plain rice cakes
16 mini
Carrot(s)
1 medium, cut into matchsticks
Dried nori seeweed
1 sheet(s)
Sesame seeds
⅛ tsp, black variety
Capers, rinsed, drained
2 tsp, baby capers
Cheese stringer or stick
1 stick(s), cut into 8 slices, (20g)
Instructions

Mash avocado in a small bowl with lime juice. Season with salt. Spread mixture evenly over each rice cake.

To make the witches, place 3 or 4 matchsticks of carrot on either side of 8 rice cakes to form the hair. Cut 8 small triangles from nori sheet, using a rice cake as a size guide, then place triangles on top of each rice cake to make witches hats. Place 2 sesame seeds below hat to make the eyes. Place one matchstick of carrot in centre of avocado mixture, facing upwards to form the nose.

To make the one-eyed monsters, arrange 4 or 5 matchsticks of carrot on top of remaining 8 rice cakes to form the hair. Place 1 slice of string cheese in centre of each rice cake, then place 1 caper on top of each. Serve.
