Mixed berry pudding cups

99% fat-free plain yoghurt

- Cook black rice following packet instructions, allowing 3 minutes additional cooking time. Drain and set aside to cool.
- Combine dates and 1 tablespoon boiling water in a large microwave-safe bowl. Cover and microwave on High (100%) for 1 minute. Process berries, chia seeds, half the dates and 1 teaspoon vanilla in a food processor until smooth. Transfer to a small bowl and set aside.
- Process two-thirds of the cooked rice with bananas, yoghurt and remaining dates and vanilla in same clean food processor until combined and creamy. Transfer mixture to a large bowl and stir in remaining cooked rice. Divide mixture among 4 x 1-cup capacity serving glasses. Top with berry mixture and smooth tops with the back of a spoon.
- Cover and refrigerate for 4 hours or overnight. Sprinkle with almonds to serve.
