Mini Thai chicken patties

Yum! Bite-sized patties that are packed with delicious Thai flavours
Ingredients
  • chicken breast mince
    500 g
  • green shallot(s)
    2 individual, finely chopped
  • fresh coriander
    ¼ cup(s), finely chopped
  • lime rind
    1 tsp, finely grated
  • lime juice
    2 tbs
  • sweet chilli sauce
    2 tbs
  • fish sauce
    3 tsp
  • brown sugar
    2 tsp
  • oil spray
    1 x 3 second spray(s)
Instructions
  1. Place mince, shallots, coriander and rind in a large bowl. Season with salt and freshly ground black pepper and mix until combined. Roll rounded tablespoons of mixture into balls and flatten slightly to form 20 small patties.
  2. Combine juice, sweet chilli, fish sauce and brown sugar in a small bowl. Stir until sugar has dissolved. Set dipping sauce aside.
  3. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook patties, in batches, for 3 minutes each side or until cooked through. Serve with dipping sauce.
Notes
VARIATION: Add 1 garlic clove (crushed) to mince mixture in step 1 or swap chicken for turkey breast mince.
