Mini plum turnovers

Using ready-rolled pastry makes these fruity treats simple to make. Serve warm as a dessert, or cold for teatime.


Ingredients
Plum(s)
288 g, (buy 300g plums), stones removed, roughly chopped
Star anise
1 individual
Cinnamon quill
1 whole
Maple syrup
3 tsp
Reduced-fat puff pastry
2 sheet(s), (2 x 170g), thawed
Egg(s)
1 medium, lightly beaten
Vanilla bean extract, alcohol free
1 tsp
Icing sugar
2 tsp
Instructions

Combine plums, star anise, cinnamon, syrup and vanilla in a medium saucepan. Cook, covered, on low heat for 5 minutes, or until plums soften. Remove lid and continue cooking until mixture thickens and becomes sticky. Remove from heat and set aside to cool. Discard star anise and cinnamon.

Preheat oven to 180°C. Line 2 bakings trays with baking paper. Cut each pastry sheet into 9 squares giving you 18 in total. Put even spoonfuls of the plum mixture into the centre of each pastry square. Lightly brush edges with egg. Fold over to form a triangle, pressing down edges to enclose filling. Place on prepared trays and lightly brush with egg. Repeat to make 17 more triangles. Bake for 15-20 minutes, until crisp and golden. Leave to cool for 10 minutes, then dust with icing sugar to serve.
